Equipment

  • 1 Frying Pan
  • 1 Sharp Knife
  • 1 Chopping Board
  • 1 Jar or small container Any small vessel with a water/air tight seal

Ingredients

Protein

  • 1 Steak About the size of the palm of your hand

Salad Greens

  • 100 g Salad greens Use your favourite fancy lettuce, or even a mix of lettuces and baby spinach
  • 5-10 Cherry tomato halves or 1 regular tomato, chopped
  • 1/3 Telegraph cucumber chopped your favourite way

Dressing 1

  • 2 tbsp Lemon Juice Juice from about half a medium sized lemon
  • 1/2 tsp Table Salt Use iodised salt
  • 2 tbsp Olive oil Extra virgin

Dressing 2

  • 2 tbsp Lime Juice Juice from about half a medium sized lime
  • 1/2 tsp Table Salt Use iodised salt
  • 2 tbsp Sesame oil Use toasted, but if you can't find it, then regular is good too

Instructions

Salad

  • Cut the salad leaves (if large) and toss into a bowl with the chopped cherry tomatoes
  • Pick either salad dressing 1 or 2 and put the salt, oil and citrus juice into a small jar or container and shake. It will separate immediately, so leave it in the jar until you're ready to pour over the salad.

Protein

  • For the best crispy brown outside use a paper towel to pat dry the steak on both sides.
  • Heat the pan BEFORE adding oil. Don't add the oil until the pan is hot. Do a water test to check if the temperature is hot enough, or too hot.
  • Add oil or butter to the pan to prevent sticking, oil is easier to not burn. The oil should shimmer immediately if the temperature is right.
  • Put the steak down in the pan and don't move it, or it will stick. When the outside has browned it will release from the pan easily if the temperature was right when it went in.
  • When the brown colour has reached just over half way up the outer of the steak, flip it to sear the other side. Leave the steak until it reaches your desired doneness.
  • Salt the steak to your personal preference on the plate.
