Equipment

  • 1 Sharp Knife
  • 1 Bowl
  • 1 Table Spoon Measure (you don't really need to measure, just wing it to taste)

Ingredients

  • 1/3 Telegraph Cucumber You can use any kind of cucumber
  • 1/2 tsp Iodised Salt You can just add salt to taste
  • 2 tbsp Lime Juice Fresh is the best taste, but check bottles to make sure there's no additives
  • 1 tbsp Sesame Oil Toasted is the *best* flavour
  • 1 tsp Toasted sesame seeds optional
  • Finely chopped fresh/frozen chilli - to taste optional (I never add this)

Instructions

  • Chop the cucumber in to smaller pieces, and add to a bowl. Coins, long thin slices, or cubes are all great options
  • Add the lime juice, then salt, then sesame oil and mix together. Alternatively mix the dressing in a separate bowl then pour on top.
  • Add any of the optional toppings and enjoy
